Cilantro Hummus is easy to make. Start by making a simple, lemony chickpea hummus and blend in fresh cilantro sprigs. Great served with veggies or as a sandwich spread.
1 can (15 ounces) chickpeas (garbanzo beans), rinsed and drained
2 tablespoons almond butter or tahini
2 tablespoons extra virgin olive oil
3 tablespoons fresh lemon juice
1 clove fresh garlic, finely chopped (optional)
1/2 teaspoon coarse salt
1/4 teaspoon ground cumin
Dash cayenne pepper
2 to 3 tablespoons water
1/2 cup fresh cilantro sprigs
In a food processor, place chickpeas, almond butter, olive oil, lemon juice, garlic, salt, cumin and cayenne. Cover and process until smooth, scraping sides as needed. With food processor running, slowly add enough water to reach desired consistency. Add cilantro sprigs; cover and process until smooth.
Serve with fresh veggies or whole wheat pita chips. If desired, garnish with a drizzle of olive oil and chopped fresh cilantro.
Makes 1 1/2 cups
Recipe Tip: Use only the leaves and tender stems of cilantro. Remove and discard any thick, woody stems.
