Vegetarian Thanksgiving Recipes (last minute ideas!)

Oh dear. Thanksgiving snuck up on me this year. Well, if I’m honest, it happens every year. It’s accurate and probably obvious to say I am not a planner. If you’re anything like me, I hope this roundup of simple vegetarian and vegan Thanksgiving recipes helps you with last minute ideas. If you are the opposite of me, add them to your menu plan for 2016! Either way, I hope you have a safe, happy and delicious holiday.

P.S. I’m sharing recipes from the archives of Eating Clean Recipes, and from my new blog, Kingfield Kitchen. To get my latest recipes, please follow me on Instagram and Facebook, or sign up for email updates over at Kingfield Kitchen.

Vegan Stuffed Peppers Vegan Stuffed Peppers from Kingfield Kitchen
Here’s a tip. Many vegetarians don’t miss turkey, and don’t care to be served bizarre tofu turkey sculptures. Veggies are just fine, thank you. I’d rather have a vegan stuffed pepper any day of the week, including Thanksgiving. (rant over) Oh, try these sweet peppers stuffed with rice, mushrooms and greens.

Sweets
Vegan Oatmeal Apple Crisp Easy Vegan Apple Crisp from Kingfield Kitchen
A vegan dessert that is worth sharing! Spiced apples with a crumb topping made with old-fashioned oats, almond meal, brown sugar and coconut oil.

Traditional Pumpkin Pie Traditional Pumpkin Pie
Because some traditions are here to stay, I made traditional pumpkin pie every Thanksgiving.

Happy Thanksgiving!
