I like to mix chia seeds in my smoothies. You can mix them in a lot of juices, but I don't really like them in OJ.

It's fun to make the chia gel but add a bit of lemon juice and some sugar. Yummy.

Great, adaptable recipe! Made with my kids...we used 2/3 cup vanilla greek yogurt and completely omitted the brown sugar...still really sweet and less calories. Seemed to cook in about 20-23 minutes.

Hi Jillian- Great question! Coconut oil is a soft solid at a room temperature of around 70 degrees. Much hotter than that and the coconut oil will be liquid. You can use either soft solid or liquid coconut oil to make the cookies. (Some people like to keep their coconut oil in the fridge, which makes coconut oil very solid. If you keep your coconut oil in the fridge you'll need to soften it at room temperature.)
Thanks,
Jen

This might be an obvious question but I've never worked with coconut oil before... Do you melt the coconut oil before mixing it with everything?

Hooray! Thanks, Jen! The recipe is now pinned. :) I have all this pureed pumpkin I froze from last year's Halloween, and this looks like a fabulous way to utilize some of it.
