Spinach and Avocado Green Smoothies

Avocados are one of my favorite foods. They’re rich and creamy with a delicate flavor that pairs well with so many ingredients. Most people think of guacamole when looking for an avocado recipe. (For good reason…yum!) But avocados are great in other recipes like creamy salad dressings and smoothies.

Here’s a recipe for green smoothies with spinach and avocado. The spinach adds a fresh flavor and the avocado gives the smoothie a thick and creamy consistency. Sweeten as desired with your favorite natural sweetener. I used a healthy squeeze of Bee-Free Honee.

Spinach and Avocado Green Smoothies
1 1/4 cups cold water
1 cup fresh or frozen mango chunks
1 cup fresh baby spinach
1/2 medium ripe Hass avocado, peeled and pit removed
1/2 cup ice cubes
Natural sweetener to taste

Add water, mango chunks, spinach and avocado to blender container. Cover and blend until smooth. Add ice; cover and blend until smooth. Taste for sweetness. Add natural sweetener according to your taste; cover and blend to combine.

Makes 2 servings (2 3/4 cups total)

Creamy Strawberry Almond Smoothies

You don’t need to use cow’s milk or ice cream to make a milkshake. Here’s a healthy (and tasty) alternative to a strawberry milkshake. Almond milk, coconut milk and banana provide a creamy consistency. Strawberries add a pop of color and berry sweet flavor. A handful of almonds adds a boost of nutrition. (vegan, dairy-free recipe)

Creamy Strawberry Almond Smoothies
3/4 cup unsweetened vanilla or original almond milk or soymilk
1/4 cup canned unsweetened coconut milk
1 cup frozen strawberries
1 medium banana, sliced
20 raw almonds, chopped
1 tablespoon pure maple syrup or agave syrup
Few drops pure vanilla

Add almond milk, coconut milk, strawberries, banana, almonds, maple syrup and vanilla to blender container. Cover and blend until smooth.

Makes 2 servings

Tip: You can substitute 2 tablespoon almond butter in place of the raw almonds.

Mango Coconut Water Smoothies

I woke up this morning craving a smoothie. Maybe it’s because I’ve spent the last week making some of my favorite smoothie recipes like Chocolate Almond Smoothies and Good and Green Smoothies.

Oh, did I mention I was making them on camera? Add a video camera to the mix and making a smoothie turns into a several hour process. It’s fun though. I’m trying to learn more about shooting and editing video. I figure the more videos I do the more I’ll learn. Look for the videos to be posted in the next few days. In the meantime, here’s a simple smoothie recipe featuring coconut water, mango and strawberries. It has a slushy consistency and is really refreshing. The best part is it only took me 5 minutes to make since no filming took place during the making of this smoothie!

Mango Coconut Water Smoothies
3/4 cup coconut water, chilled
1/4 cup orange juice, chilled
1 cup fresh or frozen mango chunks
1/2 cup frozen strawberries
1/2 cup ice cubes

Add coconut water, orange juice, mango chunks and strawberries to blender container. Cover and blend until smooth. Add ice cubes; cover and blend until slushy. Pour into 2 glasses.

Makes 2 servings

Tip: Coconut water is the liquid from young, green coconuts. Coconut water is naturally fat-free and full of electrolytes like potassium. Be sure to use coconut water for this recipe, not coconut milk. (Although coconut milk would be delicious! If you try it, let me know how it turns out.)

Chocolate Almond Smoothies

Craving a treat but don’t want to break the calorie bank? Try this chocolate almond smoothie recipe. It tastes like a shake, but has the goodness of smoothie ingredients like banana, almond milk and almond butter. Cocoa powder provides a chocolate fix, while pure maple syrup adds a touch of sweetness. Sip on this, and skip the ice cream.

Chocolate Almond Smoothies
1 cup unsweetened vanilla or original almond milk
2 medium bananas, sliced
2 tablespoons almond butter or 20 raw almonds, chopped
1 tablespoon unsweetened cocoa powder
1 tablespoon pure maple syrup or agave syrup
1 cup ice cubes

Add almond milk, bananas, almond butter, cocoa powder and maple syrup to blender container. Cover and blend until smooth. Add ice; cover and blend until smooth.

Makes 2 servings
